Is there pressure? Yes there’s gonna be
pressure. The Chefs right next to you, there’s traffic behind you and customers are
sitting in front of you. So there’s a lot of things going on. Will there be a
hundred percent that they will love your dish? Not always. You just have to put
your best foot forward and making sure that you’re doing the best you can, just have fun at it. My name is Tony Chen, I’m the chef and
owner at Tony in the heart of downtown Ogden. Sushi literally means vinegar rice. It goes back into well, what is sushi? It’s all about the rice Japanese cuisine is about the
ingredients whether if it’s rice or whether if it’s the fish you let the ingredients shine Even though I’m Chinese
I believe that it’s the subtleness of the Japanese cuisine that made me fall in
love with it. The passion came from my mom. My mother was cooking mostly Chinese food but then she likes to invent things so we’re all
about inventing and creating and making new stuff When a customer comes back says, Tony, you guys did a great job, it’s so good, never had this before It feels very good. I said staff, crew, chefs, you guys did a great job. Keep it up and let’s do it
again tomorrow.
