Superfood Panzanella Salad Recipe



hi I'm Natalie and today we're gonna be making a super foods panzanella salad it's delicious it's filled with tons of veggies and it's got bread we're even gonna make a quick dressing to go with it make sure first we were sure to get a big bowl to put all of your stuff in I'm just gonna set that right here so we have a lot of different greens going into this salad but romaine baby kale broccoli Brussels sprouts and those are gonna be the base of our salad so the key for me to making this superfood salad extra delish is to get the chopping right so first we're gonna kind of like just cut up this romaine sort of just in strips like this it's super quick and easy and you're just gonna make it go really fast I love it a lot of this comes pre washed it makes it super easy and I give it one more just kind of cut down the middle I'm gonna take all of this put it in a big bowl because I'll show you the best way to toss this okay so now we've got our romaine lettuce all good to go over here next up we're gonna buy some baby kale you can do all there's all different kinds of kale up there I like baby kale because you get all the nutrition and it's not quite as dense as some of the other kills so for this particular recipe I'm just going to tear this up and toss it in it gives a great just a little bit of a bitter crunch to the salad it's gonna help balance all of your flavors make it super delish and just toss it up in there I've got lots of greens going on and that is exactly what we want for this recipe next up we're gonna do a whole head of broccoli so just cut off the big part of the stem here just like this can save all these little baby ones cut off any of the little heads like that perfect and what we're gonna do for this is we're gonna kind of chop it up really finely and this way you get all the nutrition of the broccoli but without all the extra like too much crunch in the salad because we're gonna get that from a few other things but I love that with the broccoli adds especially the raw broccoli you're getting all this yummy nutrition and fiber so just give all of this get really good chopping up you want it to be kind of fine it gets a little messy don't worry about it it doesn't need to be like perfect by any stretch of the imagination that is why I love these salads everything kind of gets tossed together it's just super delish if you see any big pieces kind of like this from the core go ahead and toss those out we want this to be a little bit softer so what you're gonna see here it's gonna look something kind of like this it's nice and just small a little bit of a crunch nothing too much next step we're gonna do some brussel sprouts now I've tried this before where I bought these already from the store already sliced and I thought that they were just like a little bit dry and not the right texture you can certainly try that if you want I like to cut them on a mandolin so I use a glove just to be extra safe some people you know my owner risk it but I say no so I put this on the smallest thinnest study and then from here what I'm gonna do is I'm just gonna slice these up just like this so you can kind of see what this looks like here got these kind of they're just like super thin and light and almost like Airy and that is exactly what we want for this salad this is why I think it's great to go through the extra effort on the mandolin so we're all done there can take this off go ahead and close this up get it out of our way and I'm gonna put all these Brussels sprouts right in here with our salad next step we're gonna work on our bread this is what I'm gonna use today is just Dale French bread it's great if it's a little bit old it's a little bit drier it'll hold up better with the seasoning and you can get this at any bakery sliced bread works as well but try to go for a loop so you can make big fat squares I'll show you how to do that so these are about like almost an inch wide I'm using a bread knife so that I don't have to press down on the bread and it doesn't get squished looking like that this is kind of what we're going for here she's big thick slices just like that and then this way it's kind of like we're making huge croutons I like to call this bread salad it's one of my favorites you're getting all the delicious is of some carbs so here I'm just making these big cubes just like that just putting these into big squares finish this up when you're done you know you're gonna want like a couple cups worth and I'll add a lot of flavor to your salad here I have a big bowl and first what I'm gonna do is I'm going to toss it with about like a tablespoon or so of olive oil and the reason I like to put it in the bowl first it says that one piece of the bread doesn't soak up all the oil so I'm just gonna kind of line it like that get it all nice in there in the bowl then I'm going to add my herbs I've bought some dry parsley I'm just gonna add that in and then over here I have got some dried oregano tons of seasoning tons of flavor it really could go with anything so if we're planning on using some different flavors this is a really great way through all my bread in there I'm going to add a little bit of fresh broth pepper that I have over here give it a good toss maybe like half a teaspoon or so I'm just going to toss this all together get it all in there try to get each piece sort of evenly coated so I've got this now I'm gonna put it on a baking sheet and I'm gonna toss it in the oven for about five minutes okay I'm just taking these out of the oven they were in there for about five minutes at 400 degrees toss them about halfway through so that they get kind of toasted on each side so next up I am just gonna let the cool off so I'm gonna set them back here now I have some pistachios I love using pistachios because they're so salty and they're green and I just like to add extra green wherever I can I'm gonna do about that's about a cup you can do a little bit more if you like extra it's really really up to you that's the great thing about this salad I'm gonna give these a quick chop these are whole ones you can buy them already chopped I like to get them roasted salted it's really up to you we are adding plenty of things that's gonna give this salad flavor but I do like to use roasted pistachios so now we are going to just toss these and our big big salad bowl I think he's the biggest ball I have so that I can get the solid all evenly coated all right next up we have the pear I love using pears for sweetness if you can find them if not apples work great in this salad well like a Granny Smith or something but I love just the sweetness of this pair what we're gonna get because up kind of thin not too thin because I want it to stand up but just you know about a quarter of an inch or so slice this up I'm going to nothing too fancy here it's already trying to come together and look really really nice yeah this is a big one okay except I have my other pair for later I'm gonna go ahead and cut the slices and just have it ready to go okay next up we are gonna make our dressing super simple dressing I use it for tons of different kinds of salads but it works especially well with this one we have some simple ingredients we're gonna use a couple tablespoons of olive oil just put that right in your bowl there we go I like to use apple cider vinegar with the mother just to get some extra probiotics in there we're gonna add about a tablespoon to depending on how much you're making for this purpose is I'm gonna it's about two there we go and a good French mustard this is a dis drawn mustard you can use whatever you have but I'm gonna chop just a little bit of Tang when you open it up this is how you know you're gonna get some of that flavor it does get toned down once you put it you mix it with all the salad about 2 big tablespoons that's recipe and next I'm gonna add just a little bit of salt this just helps bring out the flavors I'm gonna add about a teaspoon perfect now I just put this together with a fork it's very simple it's nothing fancy and that is one of the reasons why I love it so much and this is what its gonna look like you're gonna see it it's not too thick so that way it's gonna evenly coat all of our veggies give it a little taste test it should be just a little bit tired a little bit tangy that's exactly what we're looking for so we're right here and I'm just gonna give that all over the salad when I get it all in there show you here so good just like that super awesome I'm gonna have these songs ready to go and I'm gonna give all the veggies with the dressing a big toss on their own and this is just gonna get make sure that everything gets really well coated gonna be delicious okay now we're gonna move on to the bread now we've let our bread all cool down so I'm gonna add it to the salad that we've already tossed just like that get it all in there I mean I'm gonna give it one more big toss make sure you get all the little crumbs you can see that we have like you know a good bread salad ratio everybody's lookin good just like that now for the fun part we're gonna plate it and make it look really really pretty I like to serve my salads on a big platter um you can do it in a big bowl as well but this salad is specially good for a platter because it's so it's not you know dressed too heavy or anything like that and it's just pretty it kind of like it shows all the ingredients get them all out there showing off and looking good it's so fresh this is looking really really good got it all in there okay here what I'm gonna do is we're gonna do a little bit of pecorino cheese I like to do big slices so I use this side of the cheese grater and this is gonna give us big long slices they're kind of thin and they just worked so nicely in this salad so you just kind of go all the way down on your cheese grater just like this but I'll show you here kind of what it looks like you get these kind of thin slices and they kind of you know crumple them a little bit all over you kind of see this in Caesar salad sometimes maybe a little bit thinner but I just love to add this all over the plate now I like to finish it with just a little bit of pear slices like I said so that people can kind of see what they're eating so I just sort of make them into this sort of three and I just played those sort of around anywhere that kind of looks good you can kind of get a little creative this just adds a little extra finishing touch so that your salad just looks a little bit more and it's a great way to be like oh she really took a lot of time to make this but and we're done this is your panzanella superfood salad
