One-Pot Spicy Spanish Seafood Stew

it is so great to be here with you guys today we have such a great episode
we’re making a one-pot spicy Spanish seafood stew this is one heck of an incredible seafood dish
loaded with Mediterranean flavor very easy to make uses simple ingredients
you can find at almost any supermarket and it’s done in 30 minutes now to make this recipe
I have a couple recommendations the first one makes sure use fresh mussels
don’t use the frozen kind for the second thing
I’m using Cod as my main fish but you can use any type of mild fish that you prefer
and for the last thing make sure you use some high quality saffron
don’t use the imitation stuff as this is what gives this dish
that beautiful Mediterranean flavor as always I’m using saffron threads from golden saffron
this is some grade 1 high quality premium saffron folks in does not get any better
or higher quality than this I can’t recommend it enough
link below where you guys can get this alright let’s get started we’re gonna begin by grabbing between
12 to 14 fresh mussels rinse them under some cold running water and to clean the mussels
you want to remove the beard first and then using a butter knife
scrape off any of the barnacles now you can use anything you want to clean these
mussels but I love using a butter knife it easily removes all the barnacles next up I’ve got 12 raw jumbo shrimp
that have been peeled and deveined I bought these frozen and thawed them out
just because it makes it a lot cheaper I’m gonna pat them down with some paper towels and then season them with sea salt
and freshly cracked black pepper for the final fish to prepare
I’ve got 4 fillets here of cod again I bought these frozen and thawed them out

and freshly cracked black pepper I also have here 3 cloves of garlic that I finely minced
and 1/2 an onion that I finely diced okay let’s start cooking our stew
grab a saute pan heat it with a medium-high heat and add 2 tablespoons of extra virgin olive oil 2 minutes after adding the oil I’m gonna add the
diced onions and the minced garlic and mix them around with the oil
you want to stir this occasionally that way that garlic doesn’t burn about 3 minutes after adding our onions and our garlic and the onions are nice and translucent
I’m gonna add 1 tsp of hot smoked Spanish paprika and 1/2 a tsp of Mediterranean thyme and mix this together until everything is well combined you wanna do this pretty quickly
that way that paprika doesn’t get a bitter flavor then we’re gonna add a 1/4 cup of white wine
and mix it all together about 2 minutes after adding the white wine into the pan
and all the alcohol has burned out I’m gonna add one 15 ounce can of diced tomatoes season with sea salt and freshly cracked black pepper
and mix it all together until it’s well combined about 2 minutes after adding the tomatoes into the pan I’m gonna add 1 cup of a high-quality fish broth pinch in 1/2 a tsp of saffron threads
and lightly season with sea salt and give it a gentle mix
that way everything’s well combined once this comes to a boil
let’s start adding our fish into the pan I’m gonna begin by adding the cod fillets first then add the shrimp and finally we’re gonna add our mussels into the pan and place a lid on top of the pan we’re gonna cook this between 5 to 6 minutes you can give the pan a quick shake once in a while
that way everything’s well combined about 5 to 6 minutes after adding the lid into the pan
let’s go ahead and remove it and look at this this looks so beautiful
all the seafood should be perfectly cooked let’s go ahead and remove it from the heat and garnish it with some freshly chopped parsley this is
gonna add a beautiful freshness to this seafood stew okay guys our spicy Spanish seafood stew is done this looks so amazing
let me be honest here with you guys the smell in this kitchen is absolutely out of this world let’s give this a try and see how it turned out here we go wow such a beautiful harmony of flavors
it’s just heaven in your mouth all the seafood those shrimp and little bit of that cod
perfectly cook between 5 to 6 minutes all the mussels are open
speaking of that let’s try one of those and see how they turned out here we go perfectly cooked so good

  16. Ooooh ooohhh beautiful seafood πŸ’— I love fresh mussels so much but they are bit harder to find around my area. When I was in South Africa you can just go and pick your own from the rocks. There were so many and boy did they stuck to them rocks hard. I would love to taste that and yes got to have some bread to soak up the juices Yum Yum πŸ‘πŸ˜‹πŸ‘‹
