My Market Story: The Organic Meat Specialist (T.O.M.S)

(gentle music) – My name’s Tom Niall. I’m the owner of The
Organic Meat Specialist or TOMS, funnily enough. It’s actually our 10th year. I’m not a butcher by trade. And the first day, the eighth of August 2007 was the first day I had ever worked in a butcher shop in my life. So I’ve still got my
fingers, which is good. But, it’s been an awesome
experience, amazing experience. (gentle music) My wife Jane and I were customers of the market. We were just walking
down the aisle one day and there was literally a space here at the market which had the roller shutter downs. And, it was used as a storage facility. And we sort of looked at
each other and we literally saw a whole in the market and we thought, why don’t we open an organic butcher here? I think the beauty about
organics is that it it looks after the
animal, it looks after us, and it looks after the environment. The market want to be known as the the destination for ethical, sustainable purchasing right across the board. The market’s amazing, it’s obviously known as The Village
Market, which it really is. The beauty is that the
stallholder is present that you can hear their story. And it’s really something
that our customers love. They love knowing that
it was raised ethically and sustainably. And that’s what we’re all about. We’ve got lots of little organic farmers dotted around the place that we work with. It’s just empowering the consumers and giving them the information to walk away and ask the right questions. And knowledge is power, I guess. So, that’s definitely something I am proud to say that I think
I’m glad to be part of here. And, that’s my market story. (gentle music)
