Masala Khichdi – Rice and Moong, Indian Classic Meal Recipe by Manjula


Today I will be making masala khichdi. There is no better comfort food than khichdi. Masala khichdi is just that. It is a spicy variation of simple khichdi. This is very healthy and one dish meal. Usually khichdi is served with yogurt, pickle and papadum. This recipe will serve 3. To make masala khichdi the ingredients we need: 1/2 cup of moong dal washed and split 1/2 cup of rice I have already washed dal and rice together. 1/2 cup of cut green beans 1 medium size potato washed, peeled and cut in small cubes. This will make about 1/2 cup of cubed potatoes. 1 teaspoon salt 1/4 teaspoon turmeric (haldi) 1 tablespoon clarified butter (ghee) We also need about 3 cups water for cooking. For spice mix we need 1.5 cups tomatoes finely chopped 2 tablespoons clarified butter (ghee) 1/2 teaspoon of cumin seeds (jeera) 1/2 teaspoon mustard seeds (rai) 1/8 teaspoon asafoetida (hing) 1 green chilli finely chopped, adjust to your taste. 1/4 teaspoon of red chilli powder 1/2 teaspoon of salt 2 teaspoons of finely shredded ginger (adrak) 2 tablespoons finely chopped cilantro And 1/4 teaspoon of garam masala. First I will make khichdi. I like to use pressure cooker because it is a time saver. It takes five minutes after khichdi comes
to boil otherwise it will take about 25 minutes in a pot. Then I will make spice mix with tomatoes and mix both things together. Khichdi will be ready to serve. I am ready to make khichdi. Water Rice and dal Potatoes Green beans Salt Turmeric And clarified butter. Mix it. Heat is on, medium high. Close the pressure cooker. Heat is on, medium high. Wait till pressure cooker start steaming and then we are going to lower the heat to medium. Pressure cooker has started steaming so I will lower the heat to medium and let it cook for about 4 minutes. This has been about 4 minutes. I am ready to turn off the heat. And wait till all the steam is escaped before
we open the pressure cooker. This has been about 5 minutes. All the steam has escaped and I am ready to open the pressure cooker and check the khichdi. It’s looking good. So now I am ready to make the spices. I am ready to make the spice mix. Heat is on, medium high. Clarified butter or ghee This should be moderately hot before we add the spices. Oil is ready. So let’s add the Cumin seed Mustard seeds Asafoetida Stir just for few seconds till all the seeds pop. Now add the tomatoes. Ginger Green chillies Red pepper And salt And cook the tomatoes till they become very soft, tender and little mushy. That should take again about 4-5 minutes. Tomatoes are looking good, very nice and tender. And now it’s time to add the cilantro. And garam masala Mix it well. And just cook for one more minute. Lower the heat, to low. And now this is the time to add the khichdi. And just fold the khichdi gently. Khichdi is looking good. Now let it simmer for about 2 minutes over low heat and then khichdi will be ready to serve. Masala khichdi is looking superb! Nice color and nice aroma of garam masala. Khichdi is basically prepared with rice and lentil. Every household has their own recipe for khichdi. At my home khichdi was made with just rice
and moong dal. Adding a few vegetable with spicy tomato seasoning makes khichdi a complete meal. This is my today’s dinner. And I will be serving khichdi with yogurt and papadum. Enjoy. Thank you. Till we meet again, check out more recipes
