BREAKFAST.>>EVERY ONCE IN A WHILE I JUST GET SUCH A CRAVING FOR PANCAKES FOR BREAKFAST, BUT TYPICALLY WHAT HAPPENS IS I WILL HAVE A COUPLE OF PANCAKES AND I WILL FEEL GREAT AFTER EATING THEM, BUT IT WON’T BE LONG AND I WILL BE HUNGRY AGAIN, AND IT IS BECAUSE THEY ARE SUCH A HIGH SUGAR CONTENT IN MOST PLAIN OLD PANCAKES AND THE FLOUR TURNS TO SUGAR, SO ONE THING THAT YOU CAN DO TO ADD A LITTLE FIBER AND A LITTLE BIT OF PROTEIN THAT WILL HELP THE PANCAKES STAY WITH YOU LONGER IS TO ADD SOME ROLLED OATS. SO I WILL SHOW YOU HOW I MAKE SOME ROLLED OAT PANCAKES. AND THESE WILL KEEP YOU FULL AND HAPPY FROM BREAKFAST UNTIL LUNCHTIME. THE FIRST THING I’VE DONE IS PUT 1 CUP OF ROLLED OATS, NOT THE QUICK OATS, BUT THE ROLLED OATS THAT ARE A LITTLE HEAVIER. 1 CUP INTO MY MIXING BOWL AND I ADDED 1 CUP OF MILK. YOU CAN USE DAIRY OR NONDAIRY. TODAY I’M USING ALMOND MILK WITH MY PANCAKES. I HAVE MIXED THAT TOGETHER. I WILL LET IT SIT FOR TEN MINUTES WHICH I HAVE ALREADY DONE. THAT’S THE KEY TO HAVING A NICE LIGHT PANCAKE BECAUSE IF YOU JUST USE THIS RIGHT AWAY WITHOUT LETTING THE OATS SOAK IN THE MILK, IT WILL JUST HAVE A HEAVY TEXTURE AND IT WILL BE A LITTLE BIT CHEWY. THE NEXT THING I’M GOING TO DO IS ADD 2 EGGS, AND I WILL JUST WHISK THOSE RIGHT IN WITH THE MILK AND THE OATS, AND THEN I’M GOING TO ADD A LITTLE BIT OF MELTED BUTTER, 1 TABLESPOON OF MELTED BUTTER. YOU CAN ALSO USE COCONUT OIL. I HAVE USED THAT BEFORE AND IT WORKS GREAT. 1 TABLESPOON OF SUGAR, MIX THAT IN. AND A 1/4 TEASPOON OF SALT. I’M USING KOSHER SALT WHICH IS A LITTLE BIT COARSER THAN THE FINE SALT. 2/3 CUP FLOUR THAT I’M PUTTING IN WITH MY SIFTER ALONG WITH 2 TEASPOONS OF BAKING POWDER. I’M GOING TO SIFT THAT RIGHT INTO MY PANCAKE MIXTURE. I WILL STIR THAT UP — I WILL STIR THAT UP. DON’T STIR IT TOO MUCH, JUST ENOUGH SO THE FLOUR IS BLENDED INTO THE LIQUID. ONCE YOU HAVE YOUR PAN OR SKILLET HEATED UP, ADD A LITTLE BIT OF BUTTER OR COCONUT OIL. YOU WILL BE SURPRISED ABOUT HOW LITTLE BATTER IT TAKES FOR EACH PANCAKE. ONLY ABOUT 2 TO 3 TABLESPOONS PER PANCAKE. PUT IT INTO YOUR HOT PAN, PROBABLY COUPLE MINUTES ON ONE SIDE, ONCE IT STARTS TO GET BUBBLY ON EDGES AND IN THE MIDDLE, YOU WILL SEE IT TURNING DARK UNDERNEATH AND THEN IT IS PROBABLY TIME TO FLIP IT.
