this month is all about healthy vision and this morning we're joined by Jennifer Trainor Thompson thank you so much for being with us Jennifer oh my pleasure so you just put together this book eat right for your site this cookbook we all know that carrots are good for your vision but what else it's not only carrot well you know it's interesting your grandmother was right carrots are good they're they're loaded with vitamin A but there are so many vegetables and fruits that are good for you basically the darker the pigment the better so beets kale red peppers and fruits like blueberries pomegranates and this book just provides an easy way to incorporate these ingredients into meals all day long meals all day long but also desserts this does not have to be boring I think we see him there right next to you the chocolate beet cupcakes tell me about that that's right the beet is like the stealth missile that gets into this chocolate dessert you know I think food should be interesting and lively and well spiced and it doesn't have to be boring it doesn't have to be like taking medicine and I think that this book celebrates that from breakfast to dessert we have a butternut squash hummus for example you know it's it's a an appetizer you may be used to a chick peas but butternut squash sort of dresses it up a little bit especially with the pomegranates on top and it gives you the nutrients that you need for specific eye health yeah that sounds great so why did you want to put this cookbook together to be specific for eye health yeah you know it's interesting when I started this project I didn't even know what macular degeneration was and your macula is your retina and it's a disease of your central vision so instead of seeing someone you see a big gray cloud and it affects over 10 million Americans now and it's the number one cause of leading illegal blindness in people aged 55 or older I'm a baby boomer and I know as our baby boomer population ages over the next 10 years it's going to reach probably close to epidemic proportions and I love to eat and I love to eat well and I care about good health so the two interests just dovetailed in this project when I learned that there was actually scientific evidence that your grandmother was right that what you eat is what you are I'm glad she was right because I've been telling my toddler that carrots are good for his vision but I am so thankful that you took this time for us today again eat right for your sight that's the name of the cookbook and Jennifer Trainor Thompson we appreciate your time thank you
